James Schott was the founder as well as the owner/operator of Haystack Mountain Goat Dairy in Niwot CO for 16 years.  He left a career as an educator, purchase 6 ½ acres and five goats and began making cheese.  Today the business produces cheese from about 1200 goats in their creamery in Longmont CO.  James now lives on Lamborn Mesa with about 7 goats, two sheep, 25 chickens and who knows how many bees.
